Every since we bought a crockpot this winter, we've been experimenting with new recipes every Sunday.
While some recipes haven't been as tasty as we hoped, one of our favorites to-date is a Tikka Masala recipes that we found in Real Simple Magazine.
This recipe is seriously as good as heading to your local indian restaurant, minus the gluten ofcourse.
Not only are the flavors spot on, the chicken is tender and delicious and the cucumber garnish adds a refreshing crunch with every bite.

Brownie Batter Pancakes
Now that Spring has arrived and I've gotten a majority of my wedding planning out of the way, I'm finally back to blogging.
After I posted Flourless Chocolate-Walnut Cookies, a friend passed along this jem of a recipe:

Whipping up this recipe (with gluten free rice flour) has become our new Saturday morning breakfast staple. Paired with a cup of joe and a smathering of Brummel & Brown butter, these decadent hotcakes are a sweet bite of morning bliss. And if you're looking for a salty side, a couple strips of turkey bacon will definitely do the trick.

Snackin' on Pop Corners
After a whirlwind of a holiday season and beginning to wedding plan, I've been on a blogging hiatus. But now I'm back with information on your soon-to-be new favorite snack:
Seriously, I'm obsessed. These little bites of heaven are like gluten free crack.
So far I've sampled the Kettle, Butter and White Cheddar flavors (and by sampled I mean ate half the bag in one sitting.) The Kettle is by far the most addicting, followed by the White Cheddar. The Butter flavor is good, don't get me wrong, but I was able to make a bag last a week which is saying a lot for a salty snacker like myself.
My advice...turn that dreary winter Monday frown upside down, "Pop" open a bag (yes, my lame pun intended), and start snacking.

Flourless Chocolate-Walnut Cookies
As a gift to our team at work, my manager baked some delicious (and gluten free) cookies for us. And, not gonna lie, they were amazingly delicious!
While I was home over the holiday break, I decided to be a "good daughter" and bake up some warm, chocolately goodness for the fam.
